The GAEC Bexka produces tomme cheese in the traditional way from the milk of the ewes of Elise and Olivier.
As summer approaches, the ewes are eager to leave the Basque meadows they grazed in winter and spring for the estives of the upper Aspe valley.
Elise, Olivier and their daughter Margot are also in a hurry to reach the Salistre hut in Etsaut.
Every day for 3 months, the cheeses are made in the workshop.
