In the mood for a sweet treat? Why not try Jérôme Lallemand's forest honey? Produced in the national park using local, endemic and indigenous species, this uniquely flavored honey will take you on a journey to the different islets of Salazie. A culinary journey not to be missed!

Since the age of 15, Jérôme Lallemand has lived to the rhythm of the buzzing bees. His father, a beekeeper, passed on his passion for these fascinating little creatures. Today, he has taken up the family torch, becoming one of the few beekeepers in Hell-Bourg and the surrounding area.

Passionate about the flora and the land, Jérôme distills all the flavors of the circus into his honey. Produced from native forests, this uniquely flavored honey takes us on a journey, with every mouthful, to the various islets of the Salazie cirque: Mare à Citrons, Mare à Vieille Place, Îlet à Vidot..

In addition to delighting your taste buds, this forest honey is produced in a natural environment that Jérôme strives to preserve on a daily basis. There's no question of using chemical weedkillers or repellents. His hives are built from local wood and his bees are treated with care.

For those with a sweet tooth, head to Jérôme's shop in Salazie, or to one of the local producers' stores, to discover this honey with its distinctive aromas. You'll also find this beekeeper's products at local Salazie festivals such as "Mémwar Nout Terroir" in April and the "Chouchou Festival" in July. A good excuse to come up to Salazie for a weekend, and combine natural and cultural discovery in a place steeped in history.
