Gourmet restaurant - Château de Courban

On February 1, 2024, Chef de Cuisine Maxime Lesobre took over the reins at Château de Courban.

Parisian by birth and the son of butchers, it was after an apprenticeship at Ferrandi that he joined prestigious brigades such as La Grande Cascade, where Chef Robert became his chef de coeur. He went on to grow up with such greats as Michel Rostang, Alain Passard, Jérôme Banctel and Thomas Boulard.

After the confinement, Maxime made the decision to leave the Capital, with an assertive desire to reconnect with nature.
