Alain Huet, back in Saint-Philippe after years in France, became interested in sugar cane on his territory. After many trials, this self-taught man succeeded in cultivating his sugar cane and producing vinegar.
It is for him an evidence to cultivate in organic farming and to develop quality products, of tradition, a little forgotten.
Following requests from chefs, he produces cane vinegar as an ingredient for a vinaigrette that goes perfectly with another flagship product of Saint-Philippe, palm kernels.
Alain Huet advises to use his vinegar to sublimate a palm salad or a carrot salad.
