A cuisine with delicate notes thanks to a piano and well-tuned mandolins, in this starred restaurant in the heart of the elegant park of the Château de Courban.
It was during his career as a cellist that Nicolas THOMAS discovered contemporary gastronomic cuisine. The young musician, a graduate of the music conservatories of Toulouse and Zurich, discovered a world of tastes, sensations, textures and colors that acted like love at first sight for this still unknown field. The decision was made to dive without restraint into the culinary arts.
Hard work, combined with a sensitivity, developed during 20 years dedicated to the cello, quickly make his restaurant known, opened in 2012, in a small village north of Toulouse. In 2018, the Gault et Millau guide awarded him the "young talent trophy" and the Michelin guide 1* and made his establishment "La Promenade", a table not to be missed in the Midi Pyrénées region.
In perpetual reflection and curious to discover new lands, it is during exchanges with Frederic Vandendriessche, that he proposes to join the teams of the Chateau de Courban to write a new culinary chapter.
My cuisine in a few words: "It is the encounters that create the emotion. I like to discover a product with the craftsman of the land who has worked to bring out the best of his soil. My work will be focused on awakening your senses to bring you, in the most accurate way, these products that I have selected for you. It's your turn to experience this encounter, through my vision, my kitchen brigade and my dining room team, who will know how to transmit to you all the feelings mixed with the history of a dish.
