Located in the Bains de Secours valley, Laurent and Hanna Paroix's Ferme du Vallon offers a wide range of dairy products: pressed and unpressed cheeses, yoghurt, greuil... Located in the green setting of the Bains de Secours, Laurent and Hanna farm about 40 hectares of natural meadows with a wide variety of flora. Their Basque-Béarnese ewes and Tarine cows graze there in the spring before going to the Ossalois mountain pastures, near the Spanish border. When the ewe's milk tomme is made, the whey remains, which contains a lot of soluble proteins. By heating this whey, these proteins rise to the surface and agglomerate: this is the greuil. With a very typical taste, it is traditionally eaten with sugar but it can also be used like cottage cheese, sweetened or salted. Where to buy the products: - directly at the farm, from the beginning of December to the end of June: every day from 10am to 12:30pm - in the markets of Pau and Sévignacq-Meyracq, - in the organic grocery stores and creameries of Pau, - in the restaurants and in particular in the Hotel Restaurant les Bains de Secours in Sévignacq-Meyracq, which also benefits from the National Park - Pyrenees Spirit Mark
