Galabé, but Kossassa? It's a lontan product, handcrafted wholemeal sugar presented in ingots for grating or in small pieces for eating. In the purest Reunionese tradition, Alain and Evelyne Huet offer this heritage product in Saint-Philippe, alongside other sweet cane delicacies such as muscovado, la cuite syrup and cane vinegar.
Back in Saint-Philippe after years in France, Alain Huet set himself the challenge of growing sugar cane naturally on his own territory. After many trials, this self-taught man succeeded in growing his cane in the wild South. For him, it's a matter of course to grow organically and to develop quality, traditional products that have been somewhat forgotten.
A true lover of sugar cane, he offers the product in all its forms, including the famous galabé, a deliciously sweet delicacy made from stewed cane juice. In his little shop on the Saint-Philippe coast, you'll also find muscovado, cane syrup and cane vinegar... everything you need to treat yourself!
Esprit national parc products
- Galabé: a local delicacy made from the evaporation of sugarcane juice. Once the water has been removed, what remains is what he calls the "cooked mass". Then comes the churning stage, where Alain obtains his product, which he offers in ingots or small pieces. You can use grated Galabé on cakes, to decorate pastries, or simply in yoghurt.
- Muscovado : sugar obtained in the same way as Galabé (but with a different churning process) which is very fine and soft. Its dark color and molasses aroma are very pleasant on the palate. It also has numerous virtues, notably for the heart and nervous system, and is rich in vitamins B3, B5, B6 and B9. Muscovado can be used in baked goods such as cookies, bananas, tarts and yoghurt
- Syrup la cuite: a highly aromatic product that is the precursor of sugar. You can use syrup la cuite in iced water, cocktails or marinades for meat or fish.
- Cane vinegar: Alain developed this product in response to requests from chefs. In fact, he developed this vinegar as an ingredient for a vinaigrette that goes perfectly with another of Saint-Philippe's flagship products, palm kernels. Alain Huet recommends using his vinegar to enhance a salad of palm kernels or carrots.

I was a wealth management advisor in mainland France. I wanted to return to my homeland to develop this business in the agri-food sector: processing palm kernels.
Then I became interested in another emblematic plant, sugar cane. And now, bingo, I'm enjoying myself, having fun every day innovating, introducing products that don't exist.
I believe in cane juice for its nutritional value, its taste, and above all its extraordinary potential uses. Returning to an ancestral method for galabé, introducing muscovado, going from financial advisor to farmer: it's not easy, but when you love nature and get involved, it's great. The essential condition for me to get started was to go organic.
I hope that on Reunion Island, we'll be able to get to grips with the Esprit Parc Nationalbrand very quickly , so that other people can recognize themselves in the brand's values.
