The Galabé but Kossassa? It's a lontan product, handcrafted whole sugar presented in ingots to grate or in small pieces to taste. It is in the purest Reunionese tradition that Alain and Evelyne Huet offer this heritage product in Saint-Philippe.
Back in Saint-Philippe after years in France, Alain Huet took on the challenge of growing sugar cane naturally on his territory.. After many attempts, this self-taught man succeeded in cultivating his cane not far from there, in Saint-Joseph. It is for him an evidence to cultivate in organic agriculture and to develop products of quality, tradition, a little forgotten.
This is how he produces Galabé, a delicacy made from the evaporation of sugarcane juice. Once the water is removed, what remains is what he calls the "cooked mass". Then comes the churning stage, and he obtains his product that he offers in ingots or small pieces.
You can use the grated Galabé on your cakes, in decoration of your pastries, or simply in a yogurt.
