Wines of the Cabridelles domain

In 2006, Elisabeth Boyé and Bertrand Servières set up as winegrowers in the Gorges du Tarn, as part of a project to revive the vine in this area. The brambles - the "bartas" - that had invaded almost all the land were pulled out. The dry stone walls were rebuilt.

Almond trees, peach trees and five hectares of vines are replanted: The Domaine des Cabridelles is born... (the Cabridelle is a wild and perennial lettuce - lactuca perennis).

The Domaine des Cabridelles markets its wines under the appellation IGP Vin des Pays d'Oc.

Anxious to develop good practices in line with the image and exceptional quality of their terroir, Elisabeth and Bertrand have been engaged in a process of conversion to Organic Agriculture since the 2017 campaign.

In partnership with the Cévennes National Park, they have invested in changes in agroecological practices to eliminate phytosanitary products, particularly for the management of grassing and the preservation of biological life in the soil. They are also attentive to the economy of the processes in the cellar, and on the conditioning of the finished products.

The grape varieties chosen are adapted to the altitude and produce complex and balanced wines: Chardonnay, Sauvignon, Syrah, Pinot noir, Marselan and Gamaray.

Manual harvesting in small crates allows us to select and carry out vatting at the optimal maturity of each plot. Each vintage brings satisfaction by the quality of the wines obtained and attests to an exceptional terroir.
